Lemony Coconut Bars

Ingredients

  • 2 cups all purpose flour
  • 1 1/4 cups brown sugar packed
  • 3/4 cup butter and marg'
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/2 baking powder
  • 1 1/2 cups finely chopped walnuts
  • 1 1/2 cups shedded coconut
  • 2 teaspoon lemon juice

Preparation

Step 1

Lemon Glaze
Combine 1/4 cup flour 1/4 cup brown sugar. Cut with a pastry blender, until in small bowl particles. Spread mixture evenly in a 10x15 inch shallow baking pan; firmly press into a smooth layer. Bake in a 350 F. oven for 10 minutes. Remove-cool for 10 minutes Meanwhile-beat eggs lightly and beat in salt, baking powder, remaining 1 cup brown sugar-remaining 1/4 cup flour, Stir in nuts, coconut, lemon juice spread evenly over baked crust and return to 350F. bake until lightly brownd, about 20 to 25 minutes
Remove from oven and immedeately brush with glaze. Cool then cut in squares. Makes about 5 dozens
Lmon Glaze In a bowl combine 1 cup unsifted powdered sugar 2 tablespoons lemon juice, 1 1/2 teaspoon grated lemon peel and 1 teaspoon warm water . mix until smooth.
