Banana Cream Pie

Ingredients

  • 1/3 cup flour
  • 2/3 cups sugar
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 3 egg yolks
  • 2 tablespoons butter
  • 1/2 teaspoon vanilla

Preparation

Step 1

Mix ingredients together. Gradually add milk. Cook over medium heat until thick and boils, then cook two(2) minutes. Remove from heat. Beat egg yolks. Add a small amount of mixture into yolks. Then stir remainder of yolks into pudding. Cook 1 minute. Add butter and vanilla. Cool slightly. Pour into pastry shell.

Layer sliced bananas on bottom of pastry shell, pour part of pudding mixture to cover. Repeat until pie crust is full, finishing with layer of pudding. Top with meringue and 'toast' meringue under broiler.
