Baby Back Ribs with Plum Barbecue Sauce

Ingredients

  • 4 racks country ribs
  • 2 tbsp. paprika
  • 2 tbsp. garlic powder
  • 2 tbsp. brown sugar
  • 4 tsp. ground cumin
  • 2 tsp. onion powder
  • 2 tsp. chili powder
  • 2 tsp. kosher salt
  • 1 tsp. cayenne pepper
  • Plum Barbecue Sauce
  • 1 tbsp. olive oil
  • 3/4 cup onion
  • 2 cloves of garlic-minced
  • 2 cups chopped ripe plums, skin on
  • 1/2 cup tomato sauce
  • 2 tbsp. brown sugar
  • 2 tbsp. Worcestershire sauce
  • 2 tbsp. balsamic vinegar
  • 1 chipotle pepper in adobe sauce plus 1 tbsp. adobo sauce

Step 1

1. Preheat oven to 325 F. Place ribs on two large baking pans. In a small bowl combine spices, brown sugar, salt and pepper. Coat ribs with spice mixture. Pour 1 cup of water into pan. Cover tightly with foil. Bake for 2 hours or until tender.

2. For plum barbecue sauce, in a saucepan heat olive oil over medium high heat. Add onions and garlic, cook 2 minutes. Add plums, tomato sauce, brown sugar, Worcestershire sauce, balsamic vinegar, chipotle pepper, and adobo sauce. Reduce heat to minimum. Simmer 20 minutes, stirring occasionally. Season to taste with salt. Remove from heat; cool. Transfer to a blender. Blend until smooth. Set aside.

3. Remove ribs from oven. Brush with one cup of sauce. Grill over direct heat until ribs are lightly charred, about 2 minutes per side. Brush with additional sauced. Sprinkle additional chopped onions.
