Ingredients

  • 2 TBS unsalted butter
  • 1/2 cup panko bread crumbs
  • Kosher salt and pepper
  • 1/4 c Dijon mustard
  • 2t packed brown sugar
  • 1 1/2t dry mustard
  • 1/2t minced garlic made into paste
  • 1/4t cayenne peppy
  • 4 6-8 OZ boneless pork chops

Step 1

1. Oven 275 degrees, rack in middle position
2. Melt butter in 10" skillet, medium heat. Add panko and cook, stirring frequently until golden brown about 3-5 minutes. Tx to bowl and sprinkle w/ 1/8t salt.
3. Stir Dijon, sugar, dry mustard, garlic, cayenne 1t salt and 1t pepper in second bowl until smooth
4. Wire rack in rimmed baking sheet and spray w/ PAM. Pat chops dry w/ paper towels. Tx chops to prepared rack, spacing them 1" apart. Brush 1 TBS mustard mixture over top and sides of each chops (Leave bottoms uncoated). Spoon 2 TBS toasted panko evenly over top of each chop and press lightly to adhere
5. Roast at 275 degrees (yes 275 degrees) 40 to 50 minutes. Remove from oven and let rest on rack for 10" before serving.
