Autumn Soup

Ingredients

  • 2 cloves garlic, peeled & chopped
  • 2 Tbs. butter
  • 2 cans (14.5 oz each) fat-free, low sodium chicken broth
  • 1 can (15 oz) pure pumpkin (like Libby's brand)

Preparation

Step 1

In large skillet over medium heat, cook 2 cloves garlic, peeled and chopped in 2 Tbsp. butter for 1 minute. Stir in chicken broth and pumpkin. Cook 4 minutes or until mixture is heated through. Divide pumpkin soup evenly among 6 bowls. Season with salt & pepper if desired.
Garnish with sour cream and sprig of thyme if desired.
