Ingredients
- 1 cup dried small red lentils
- 3 cups water
- 1 bay leaf
- 2 teaspoons olive oil
- 1 cup chopped onion
- 1 cup chopped tomato
- 1 teaspoon curry powder
- 1/4 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/8 teaspoon ground red pepper
- 1 garlic clove, minced

Step 1
1. Combine first 3 ingredients in a large saucepan. Bring to a boil. Cover, reduce heat, and simmer for 20 minutes or until lentils are tender. Drain; discard bay leaf.
2. Heat a nonstick skillet over medium-high heat. Add oil to pan; swirl to coat. Add onion and tomato; sauté 8 minutes or until onion is tender. Add remaining ingredients; sauté 2 minutes. Add lentils and cook for 1 minute. Remove from heat.
