Ingredients

  • 1

    cup dried small red lentils

  • 3

    cups water

  • 1

    bay leaf

  • 2

    teaspoons olive oil

  • 1

    cup chopped onion

  • 1

    cup chopped tomato

  • 1

    teaspoon curry powder

  • ¼

    teaspoon ground cumin

  • ½

    teaspoon salt

  • teaspoon ground red pepper

  • 1

    garlic clove, minced

Directions

1. Combine first 3 ingredients in a large saucepan. Bring to a boil. Cover, reduce heat, and simmer for 20 minutes or until lentils are tender. Drain; discard bay leaf. 2. Heat a nonstick skillet over medium-high heat. Add oil to pan; swirl to coat. Add onion and tomato; sauté 8 minutes or until onion is tender. Add remaining ingredients; sauté 2 minutes. Add lentils and cook for 1 minute. Remove from heat.
