Bacon, Lettuce, Tomato, and Cheese Salad

Ingredients

  • 6 slices turkey bacon
  • 1/4 teaspoon minced garlic
  • 1 tablespoon lemon juice
  • 1/4 cup light mayonnaise
  • 1 tablespoon chives
  • 1 tablespoon water
  • Salt and pepper to taste
  • 1 small red onion, thinly sliced
  • 1/2 pound cherry tomatoes, halved
  • 3/4 cup lowfat cheddar cheese, shredded
  • 1 head Romaine lettuce, torn into bite-size pieces

Preparation

Step 1

1. Cook bacon until crisp, drain on paper towels, crumble.

2. Whisk together garlic, lemon juice, mayo, chives, water, and s&p.

3. Toss together onion, tomatoes, cheese, lettuce, half of bacon, and enough dressing to coat. Top with rest of bacon.

Notes: Tasted like a regular salad with bacon in it! But good.
