Shrimp and Bacon Kabobs

Ingredients

  • 1 pound scallops, jumbo size
  • 8 slices uncooked reduced fat bacon
  • 1 medium cucumber, sliced into 1/2" thick slices
  • 16 medium grape tomatoes or cherry tomatoes
  • 1/2 tsp salt
  • 1/2 tsp pepper

Preparation

Step 1

1. Thread one end of bacon onto skewer.
2. Add a scallop & flip long end of bacon over
scallop & skewer it into place
3. Add another scallop & flip bacon over scallop
4. Add cucumber slice and a tomato
5. Flip bacon over tomato again and skewer it into
place
6. Continue process, threading on another slice of
bacon when necessary until skewer full
7. Season to taste with salt and pepper
8. Place kabobs on grill and broil for 4 minutes on
one side, turn and cook other side
