Blue Cheese Romaine Salad

Ingredients

  • Lemon Vinaigrette:
  • 1/2 cup pine nuts
  • 1 tbsp butter, melted
  • 6 cups torn romaine lettuce
  • 3/4 cup crumbled blue cheese
  • 2 medium apples (or pears) diced
  • 1/3 cup lemon juice
  • 1 Tbsp brown sugar
  • 1 garlic clove, peeled
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup olive oil

Preparation

Step 1

1. Combine pine nuts and butter, spread on baking sheet. Bake @ 350 degrees for 4-6 minutes, stirring once. Cool.
2. In a large bowl, combine romaine, blue cheese, apples, and pine nuts.
3. In a food processor or blendor, combine ingredients for vinaigrette except oil - process until smooth, gradually adding the oil in a steady stream.
