Ingredients
- 2 tablespoons brown sugar
- 2 egg whites
- 3/4 cup nonfat yogurt, or buttermilk
- 1/2 cup pumpkin, pureed; or sweet potato or winter squash
- 1 cup cornmeal
- 1 cup flour
- 1/2 teaspoon salt
- 1 tablespoon baking powder
Preparation
Step 1
1. Heat oven to 350. Spray 8" or 9" round baking pan. Set aside.
2. Beat sugar-pumpkin until frothy.
3. Sift cornmeal-baking powder into mixing bowl. Gently fold into wet ingredients, just until mixed.
4. Pour into pan and bake 20-25 mins, until tests done.
Notes: Excellent!
