SPICY CHICKEN FINGERS

Ingredients

  • Creamy Green Salsa:
  • 2 lbs. boneless chicken breasts cut into strips
  • 3/4 cup milk
  • 2/3 cup masa meal or cornmeal
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried parsley flakes
  • 1 tablespoon dried whole oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 - 1/2 teaspoon red pepper
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon black pepper
  • Creamy green salsa
  • 1/2 cup sour cream
  • 1/3 cup mayonnaise or salad dressing
  • 1/3 - 1/2 cup commercial green salsa
  • 1 tablespoon lemon juice
  • 1/8 teaspoon chili powder

Preparation

Step 1

Combine chicken and milk, set aside. Combine masa meal and next 7 ingredients. Combine flour and black pepper in separate bowl. to coat chicken, dip milk soaked pieces first in flour, back in milk and then in masa mixture. Place on waxed paper, freeze at least 4 hours. Place frozen chicken fingers on lightly greased baking sheet, bake at 400 degrees for 30 minutes until crisp.

Combine all ingredients, chill.
