Shrimp and Avocado Triangles

Ingredients

  • 2 (6-7 inch) pita breads
  • 6 tbs olive oil (extra for brushing on bread and sauteing shrimp)
  • 2 tbs lime juice
  • 2 medium cloves garlic, minced
  • 1 tsp round cumin
  • 1 tsp kosher salt
  • 1 tsp chopped cilantro
  • 1 tsp jalapeno sauce (Tabasco brand)
  • 2 ripe medium avocados
  • 24 large shrimp, shelled and deveined

Preparation

Step 1

Slice pitas horizontally into 2 rounds and brush both sides of each with olive oil
Stack rounds and cut into 6 wedges so you have a total of 24
Place triangles on a foil-lined baking sheet and bake on 350 degrees for 10 min until crisp and golden (turn once)
Remove and cool

Whisk together lime juice, garlic, cumin, salt, jalapeno sauce, cilantro, and olive oil
Halve avocados, peel and slice
Toss avocado slices in lime mixture and marinate while you cook shrimp

Coat bottom of large skillet with oil and set over medium heat
When hot add shrimp and saute 2-4 min until shrimp are pink
Remove and season with salt

Place 2-3 avocado slices on each triangle and top with a shrimp
Drizzle left over dressing over shrimp
