Ingredients

  • 2 T warm water
  • 1 T Chia seeds
  • 1/2 cup honey
  • 2 T coconut butter
  • 2 T unsweetened sunflower butter
  • 3/4 cup sunflower seeds
  • 3/4 cup raw pepitas
  • 2 table spoons sesame seeds
  • 1/2 t sea salt
  • 2 t vanilla extract
  • 2 t teaspoons ground cinnamon
  • 1 cup coconut flakes
  • 1/2 cup dried cherries
  • 1/2 cup dried peaches

Preparation

Step 1

1) pre-heat oven 350 degrees. line 2 baking sheets with parchment paper.

2) mix chia seeds and warm water in a small bowl and put in refrigerator.

3) Melt honey in a sauce pan at medium high heat. simmer on Medium low for 5-7 minutes. Stir in coconut oil and sunflower butter and remover from heat.

4) combine, all the seeds ( not the chia seeds yet), salt , vanilla, and cinnamon in the food processor. Pulse a few ties until it resembles coarse sand.

5) Stir in honey mixture, soaked chia seeds, coconut flakes, spread thin on 2 sheets.

6) bake for 8 minutes , stir and continue to bake for 8 more minutes until it begins to brown. Remove from oven add fruit let cool completely before storing.
