Maple Syrup Fried Eggs on Waffles

"From a Canadian website and posted for the Zaar World Tour to Canada. This is a different way to cook eggs and a yummy one at that! It sure is simple enough. *UPDATE* to the hype about this recipe! A non stick pan is a MUST..once I did these over the campfire in cast iron and burned the heck out of the syrup, BUT that may have been my fault! YES I have done brown and serve sausages in the pan with the syrup, just add a little more syrup. AND I have even done the sausages with some thinly sliced apples in a little butter and the syrup, cooked til tender then add the eggs and a little more syrup. I personally don't like fried eggs or runny yolks, so for my portion I tend to break the yolk and loosely scramble the egg before dropping it in the hot syrup.....then I just let it cook kind of like and omelet with out mixing it too much until it sets then dump the whole thing on the waffle! In a pinch we have this with frozen french toast BUT it is so much better with a nice fat crunch Eggo!"

Ingredients

  • 2 eggs
  • 2 frozen waffles
  • 2 tablespoons maple syrup

Preparation

Step 1

Over medium heat, in a non-stick skillet, heat maple syrup. Break eggs into maple syrup. While eggs are cooking, toast waffles. When eggs have been cooked to desired doneness, place on waffles, pouring hot maple syrup over top. Serve immediately.

Oh no. Total New Addiction. I typically eat eggs alone or on a sandwich for breakfast, as does DH. I LOVE waffles, and thought I'd give this a try. This is both our favorite breakfast fix. I used Recipe#1317994 for the waffle here which I think balanced the sweetness of the syrup perfectly, and toasted them to get a bit of a 'crunch' factor. I used light syrup which worked perfectly. On a subsequent batch (yup - we had seconds!) I added a Tablespoon of Smart Balance for a buttery flavor which we also really liked. Thank you so much for a fantastic recipe. It's the breakfast I'll be serving to company!

This was great! I love eggs with pancakes so I knew I would like this one!!! I was worried that the syrup would stick to the pan with the eggs, but it doesn't! Great Canadian Breakfast Recipe! UPDATED TO ANSWER SOME POPULAR QUESTIONS: *I let the syrup get hot before adding the eggs. I cooked them on medium in a non stick pan and patiently waited until it was time to turn them. *There is not enough syrup in the pan to make them splash. *They do not stick to the pan, they sort of slide around in the syrup. * No, I did not add butter. * There is no splatter like grease. * I don't know if you can cook sausage in the same pan.... I don't see why not? * *No they really are not sickly sweet and you do not need to add syrup to the waffles after.... the syrup flavored eggs give it the perfect amount of sweetness. * Yes, I added syrup, but it was only for the photo to get the "syrup effect”. I have made them again without adding syrup and liked them even more.

I did like this, but I guess I was expected more of a "fried" egg. This was more like a poached egg and I'm not particularly fond of poached anything. It was a fun change of pace.

A dear friend recommended this recipe, and I wondered if it was as good as she said. It was. I made waffles from scratch. I probably overcooked them slightly, but that worked. I did flip the eggs over, and one yellow survived. I ended up putting all the syrup in the pan on that 1-1/2 waffle and 2 eggs, and I had a lovely dinner. I decided I didn't want to wait until breakfast to enjoy. Wonderful recipe!

A co-worker was talking about poached eggs in maple syrup so I checked on zaar and as always, was able to find a recipe here. We didn't have the maple syrup so just used regular syrup and served on toast - we have bought the maple syrup so next time will try serving on waffles

I'm eating this as I type. I've always loved syrup with eggs, and knew I would like this too. My pan heated unevenly, and some of the syrup burned, so I know next time to lower the heat and just be patient while the egg cooks. None the less, it's delicious and I like that you don't have to add any fat.

I wanted soooo much to have a different "BIG" Sat. breakfast and when I read this, I knew that this was IT. I made some wheat sour dough Belgian waffle. I didn't fry the egg but poached an egg. I poured the maple syrup on the waffle and topped it with the egg. This made my house the best restruant in town. I'll be doing this often.

I made this for breakfast and my family did'nt like it. It was cooking the egg in the syrup that didn't go over well. I'm sorry. I tried.

Wow Laurie! This dish really rocks. I made this for my SS and I have NEVER seen a boy inhale his eggs so quickly. I'm not much of a sweet eater but the egg yolks really temper this dish and the combo of the yolk and the syrup results in the most wonderful taste. This is my surprise find of the month. Thanks, dear! I can't wait to make these for Dugan this weekend... he has a real sweet tooth and he is going to flip!

After seeing the pic by ncmysteryshopper , I couldn't wait to have this. I had this for dinner instead of breakfast. I never ever thought to do something like this. I would love to know how you came up with it. Absolutely DELICIOUS! I used a little butter in the pan and used a cinnamon waffle. HEAVENLY! This is my keeper for life recipe!!! After I finished eating and my pan cooled off, I scraped the hardened butter/syrup mixture out and had DESERT! Thank you so much ncmysteryshopper for the pic and LAURIE for posting this recipe!
