Cast Iron Skillet Banana Bread

Ingredients

  • 1 stick soft butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 3 overly-ripe mashed bananas
  • 1/2 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup chopped pecans
  • 1/4 cup sour cream

Preparation

Step 1

Preheat oven to 350 degrees. Beat the butter and sugars until light and fluffy. Add eggs, one at a time. Add bananas and vanilla. In a separate bowl, combine flour, baking soda, salt, and cinnamon. Add to banana mixture. Fold in pecans and sour cream : don't over-mix. Lightly butter the skillet. Pour batter into skillet, and bake about 45 minutes, until a toothpick inserted into the center comes out clean. Cool in skillet, then cut into serving pieces. Store in an airtight container at room temperature.
