Ingredients
- Turkey broth
- Leftover turkey; white & dark meat
- Sea shell pasta
- Mini carrots; chopped
- Chopped celery, if desired
- Sweet onion, chopped
- S&P to taste
Preparation
Step 1
Cook turkey carcass in salted water and let simmer for a couple of hours. May add more water as necessary to keep turkey carcass covered.
Meanwhile chop onion, carrots, and celery and set aside. When broth is ready, remove carcass and pour broth through strainer or sieve to remove small bones or gristle; add vegetables to broth. Chop leftover turkey meat to bite-size pieces and add to soup. When vegetables are partially cooked add sea shell pasta and cook until noodles are done, yet firm.
Serve with parmesan cheese sprinkled over top of each bowl.
