Ingredients

  • 2 Tbsp butter or oil
  • 1 c chopped onion
  • 1/2 c finely chopped celery
  • 1/2 c grated carrot
  • 14 oz diced tomatoes
  • 1 71/2 oz tomato sauce
  • 1 tsp sugar
  • s & p to taste
  • 6-8 medium zucchini sliced 1/4" lengthwise
  • 2 beaten eggs
  • flour
  • Parmesan cheese
  • Mozzarella cheese

Preparation

Step 1

Saute the onion and celery in oil until soft. Add remaining ingredients and simmer uncovered for 20 mins or so.

Dip zucchini into egg then flour. Brown both sides well.

In 9X9 dish, place 1/3 sauce. Layer zucchini, spread with Parmesan and mozzarella. Layer again. End with sauce and cheese. Bake at 350 uncovered 20-30 mins until hot and browned.
