Grilled Three Cheese Potatoes

Ingredients

  • 6 lg potatoes, sliced 1/4 in thick
  • 2 med onions, chopped
  • 1/3 c grated Parmesan cheese
  • 4 oz (1 c) shredded sharp cheddar, divided
  • 4 oz shredded part skim mozzarella cheese, divided
  • 1 lb sliced bacon, cooked & crumbled
  • 1/4 c butter, cubed
  • 1 T minced chives
  • 1-2 t seasoned salt
  • 1/2 t fresh ground pepper

Preparation

Step 1

Divide potatoes & onions equally between two pieces of heavy duty foil (about 18 in square) that have been coated with cooking spray.

Combine Parmesan cheese with 3/4 c each cheddar & mozzarella; sprinkle over potatoes & onions. Top with bacon, butter, chives, seasoned salt & pepper. Bring opposite ends of foil together over filling & fold down several times. Fold unsealed ends toward filling & crimp tightly.

Grill covered over med heat 35-40 min until potatoes are tender. Remove from grill. Open foil carefully & sprinkle with remaining cheeses. Can also cook in oven at 350 for 1 hr. Add cubed ham & you can serve as full meal main dish.
