Ingredients
- 2 eggs
- 15 oz whole kernal corn (do not drain)
- 15 oz cream corn
- 6 oz can evaporated milk
- 4 TBSP butter, cubed
- 2 TBSP minced onion
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cups coarsly crushed saltine crackers (1 sleeve)
- 1- 12 oz diced pepper jack or swiss cheese

Preparation
Step 1
Preheat oven to 325. Grease 9" x 13" dish. Beat eggs slightly. Stir in whole kernal corn and cream style corn. Add milk, butter, onion, salt and pepper. Fold in cracker crumbs and diced cheese. Spoon in baking dish, bake 1 hour or until set. Let stand 5 minutes. Cut into squares and serve.
