Mayonnaise III

Just another variation. I prefer using sunflower oil in my mayo, second choice is light olive oil. Do not use extra virgin olive oil for mayo, it has a much heavier taste, use light olive oil instead. If you are trying to be health conscious, both sunflower and safflower oil have a nutrition profile that is almost identical to olive oil

Ingredients

  • 1 1/4 cup light olive oil OR sunflower oil OR Safflower oil, divided
  • 1 egg
  • 1/2 tsp dry mustard powder
  • 1/2 tsp salt
  • 1/2-1 lemon, juiced

Preparation

Step 1

You can use a food processor Or an immersion blender with deep bowl.

1. Place egg, 1/4 cup oil, mustard and salt in either food processor or large deep bowl for an immersion blender. Mix the ingredients well.

2. While running, Slowly drizzle the remaining cup of oil until all is processed/mixed thoroughly.

3. After all of the oil is added and mixed, add lemon juice to taste.
