Ingredients

  • 8 jumbo macaroni shells
  • 1 1/2 cups tomato puree
  • 1 tablespoon basil
  • 1 1/4 teaspoons salt
  • 1 teaspoon sugar
  • 1/2 pound ground beef
  • 1 small onion chopped
  • 1 clove garlic minced
  • 1 package frozen chopped spinach 10 oz
  • 2 tablespoons parmesan cheese grated
  • 1/2 cup low fat cottage cheese

Preparation

Step 1

defrost & drain spinach. Cook shells 20 min & drain. Combine puree, basil 1 tsp salt, sugar & set aside. Brown beef with onion & garlic, drain. Add to meat !/3 C tomato puree, spinach, cheeses & 1/4 tsp salt. Fill each shell with 1/4 C meat mixture. Place in 9 in sq pan. Combine remaining meat mix & sauce & pour over shells. Cover & bake 45 min. at 350 degrees/
