  • 1/2 pound shrimp raw medium
  • 1 fresh jalapeno trimmed & seeded
  • 1 medium garlic clove peeled
  • 8 ounces neufchatel cheese softened
  • 1 tablespoon lime juice
  • 1/8 teaspoon salt
  • pinch sugar

Step 1

Bring a medium saucepan of water to a boil over high heat. Add shrimp and cook 2 to 3 min until opaque in center. Drain and let cool. Put pepper and garlic in a food processor pulse till finely chopped. Add remaining ingredients except shrimp, process until smooth. Add shrimp and pulse until coarsely chopped. Serve, or cover and refrigerate up to 2 days. Makes 1 1/2 cups. 87 cal 5 g fat(using lo fat cheese)
