Caramel Filled Chocolate Cookies

Ingredients

  • 3 cup butter, softened
  • 3 cup sugar
  • 3 cup brown sugar, packed
  • 6 eggs
  • 6 teaspoons vanilla
  • 7 1/2 cups flour
  • 3 teaspoon baking soda
  • 2 1/4 cup cocoa powder
  • sugar
  • 144 chocolate covered caramel candies

Preparation

Step 1

Preheat oven to 375.
Beat butter until creamy. Gradually beat in sugars. Beat in eggs and vanilla. Combine flour, baking soda and cocoa. Gradually add to butter mixture, beating well. Cover and chill at least 2 hours.
Divide the dough into 4 parts. Working with one part at a time, leaving the remainder in the refrigerator until needed. Using the purple scooper divide the dough into cookies. Quickly press each piece of dough around a chocolate covered caramel. Roll into a ball. Dip the tops into sugar mixture. Place sugar side up, 2 inches apart on greased baking sheets.
Bake for 8 minutes. Let cool for 3-4 minutes before removing from cookie sheets to wire racks.
