Shrimp & Sausage Gumbo

Ingredients

  • 1 pound sausage grilled & sliced
  • 1 pound shrimp shelled & devained
  • 2 tablespoons olive oil
  • 2 tablespoons flour
  • 1 1 pound bag frozen okra chopped
  • 2 small onion chopped
  • 1 bell pepper chopped
  • 1 can tomatoes chopped
  • 2 cups chicken broth
  • 1 cup water
  • 3 bay leaf
  • 3 cloves garlic chopped
  • 1 tablespoon salt
  • red pepper
  • 1/2 cup parsley chopped

Step 1

Make roux by stirring together flour & oil over medium/high heat until carmel colored. Do not overcook, it will taste burned,. Saute okra, onions & peppers til wilted. Add tomatoes,chicken broth water & spices. Add roux to vegie mixture. grill sausages and add to gumbo. cook til color changes from red & green to brown. The okra has discinigrated/ add shrimp and parsley or any seafood for the last thirty min. Approx cooking time 4 - 5 hours. serve over rice.
