Rice Noodle Salad

Ingredients

  • 1 pckg (8.8oz) thin rice noodles
  • 2 c fresh spinach, cut into strips
  • 1 lg carrot, shredded
  • 1/2 c pineapple tidbits
  • 1/4 c minced fresh cilantro
  • 1 scallion, chopped

Preparation

Step 1

1. Cook noodles according to package directions.
2. Meanwhile, in a lg salad bowl, combine spinach, carrot, pineapple, cilantro, and onion.
3. Drain noodles & rinse in cold H2O; drain well.
4. Add to spinach mixture.
5. Drizzle w/dressing & toss to coat.
6. Serve immediately.
