- 2 t olive oil
- 1 1/2 C thinly sliced asparagus
- 1 shallot, minced
- 1 package puff pastry
- 1 1/2 C shredded old cheddar cheese
- 8 slices bacon, cooked crisp and crumbled
- 1 egg, beaten

Step 1
Preheat oven to 375 F. Line a baking sheet with parchment paper.
In a medium skillet, heat oil over medium heat. Saute asparagus and shallot until tender, about 5 minutes.
Roll pastry out to 16x12" rectangle. Sprinkle asparagus mixture, cheese, and bacon evenly over pastry. Starting at one long end, roll pastry up tightly like a jelly roll. Place on prepared baking sheet and freeze for 15 minutes. Transfer to a cutting board and cut into 1/2" thick slices. Place slices cut side up on baking sheet and brush with egg. Bake for 15-20 minutes or until puffy and golden.
