  • Dressing:
  • 12 cups sliced almonds
  • 3 T. sugar
  • in a small pan over low heat cook almonds and sugar stirring constantly until almonds are coated and sugar is dissolved. Watch carefully. Cool and store in airtight container or ziplock.
  • 1/2 head lettuce
  • 1/2 bunch romaine or leaf lettuce
  • 1/2 cup chopped celery
  • 1 11-oz. can mandarin oranges-drained
  • grated mozzarella cheese
  • 1/4 c veg. oil
  • 1 T. parsley
  • 2 T. sugar
  • 2 T cidar vinegar

Step 1

mix salad ingredinents and keep chilled. If I make the several hour ahead of time, I wait and sprinkle oranges and chees on at time of serving. Add almonds to salad toss with dressing
