Cod En Papillote

Ingredients

• 2 cod steaks 1 1/2 pounds
• 2 tablespoons lemon juice
• 1 cup mushroom thinly sliced
• 1/2 small zucchini julienned
• 1/2 small onion thinly sliced
• 1/2 small red bell pepper julienned
• 2 tablespoons i can't believe it's not butter spread or spray
• 1/4 teaspoon dried tarragon
• pepper

Preparation

Step 1

Cut two 2 foot lengths of foil. Place 1 cod steak slightly below the middle of each square of paper. Over each steak, sprinkle half of the lemon juice, mushrooms, zucchini, bell pepper & onion. Top each with half the butter. Fold foil over the fish and crimp the edges together tightly. Place the packets side by side in a microwaveable dish. Microwave on high for 6 min., rotating a half turn after 3 min.
