Old-Fashioned Flat Cakes

These cookies, Avletter in their homeland, are the oldest known cookies in Norway. They are baked in either an avlette or krumkake iron.

Ingredients

  • 2 cups heavy whipping cream
  • 1 cup sour cream
  • 1 1/3 to 1 1/2 cups water
  • 1/4 teaspoon salt
  • 2 teaspoons sugar
  • 2 3/4 cups flour

Preparation

Step 1

In a large bowl, combine all the ingredients and beat until the batter is smooth and the consistency of thick pancake batter.

Preheat the avlette or krumkake iron over medium heat until a drop of water sizzles when dropped on top. Lightly brush the top and bottom of the iron with shortening, oil or melted butter.

One tablespoon at a time, spoon the batter onto the center of the heated iron. Close the iron and bake for 1 to 1 1/2 minutes, just until pale golden. Remove from the iron and cool flat. Stack them to serve or store.
