Rice, Broccoli and Cheese Cups

  • 1 cup Minute Rice
  • 1 cup chicken broth
  • 2/3 cup mozzarela cheese, shredded
  • 1 1/2 cups frozen chopped broccoli, thawed and drained
  • 1/4 cup ranch salad dressing
  • 2 eggs

Preparation

Step 1

Pre-heat oven to 350 degrees. Prepare rice as directed on package substituting chicken broth for water. Place cooked rice in a large mixing bowl. Cool slightly. Stir in remaining ingredients until well blended. Spoon mixture evenly into 8 greased muffin cups. Bake 25 minutes or until lightly browned.
