Ingredients
- 1 C finely chopped onion
- 1 C finely chopped celery
- 1/2 C sliced almonds (Optional)
- 3 C Wild rice/long grain rice mix cooked using orange juice for 1/2 of the cooking liquid
- 4 tsp sugar
- 1/2 tsp salt
- 1/2 tsp dried thyme
- 1/4 c grated orange peel
- 1/3 C dried cranberries
Preparation
Step 1
- Cook rice according to directions, adding cranberries and grated orange peel during last five minutes of cooking time
- Meanwhile, saute onion and celery, and almonds if using, in oil. set aside
- When rice is cooked, add onion mixture, sugar, salt, thyme and serve
