Cornish Hens and Carrots with Orange Glaze

Ingredients

  • 4 24 oz Cornish hens,thawed
  • 1 C orange juice
  • 1/4 C honey
  • 2-4 T vegetable oil
  • 1 T grated orange peel
  • 1-2 packages baby carrots

Preparation

Step 1

- Place hens breast side up in shallow baking pan(s); arrange carrots around hens
- Combine remaining ingredients; pour over hens and carrots
- Cover with foil and bake at 350 or 40 min., occasionally basting with glaze; remove foil, bake and baste another 40-50 min until juices run clear
