Norwegian Curled Cookies (Krumkaker)

The round krumkaker iron is beautifully decorated with swirls and curls. The cookies are pliable while they are hot and can be shaped around a wooden cone, or can be draped in a cup and later filled with fruit and whipped cream.

Ingredients

  • 1 cup sugar
  • 2 eggs
  • 1/2 cup butter, melted
  • 2/3 cup milk
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon crushed cardamom seeds
  • water, if necessary

Preparation

Step 1

In a medium bowl, combine the sugar, eggs and butter. Whisk in the milk, until the mixture is smooth. Stir in the flour until blended. Add the cardamom.

Preheat the krumkaker ironover medium heat until a drop of water sizzles when dropped on top. Lightly brush the inside top and bottom of the iron with shortening, oil or melted butter.

Spoon 1 tablespoon of the batter onto the center of the hot iron. Close the iron and bake for about 1 minute on each side until the cookie is browned. Insert the top of a knife under the cookie to remove it from the iron. Roll the hot cookies into a cigar or a cone shape. Cool on a rack.

Cookies become crisp as they cool. Repeat with the remaining batter. If the batter becomes too thick, stir in water, 1 tablespoon at a time.
