Green Beans Parmesan

Ingredients

  • 4 lbs. fresh young green beans
  • 2 1/2 cups diced sweet yellow pepper
  • 2 cups diced sweet red pepper
  • 2/3 cup chopped onion
  • 3 cloves garlic, minced
  • 1/4 cup vegetable oil
  • 3 tbsp. chopped fresh basil
  • 1 tbsp. chopped fresh oregano
  • 1 tbsp. chopped fresh thyme
  • 1/2 tsp. black pepper
  • 1 3/4 cups freshly grated Parmesan cheese, divided

Preparation

Step 1

Wash beans; trim ends, and remove strings. Cook beans in boiling water to cover 5 minutes; drain. Cook sweet peppers, onion, and garlic in hot oil 3 minutes in a large skillet. Add beans, basil, and next 3 ingredients; cover and simmer 10 minutes or until tender. Stir in 1 1/4 cups cheese. Transfer to a serving dish; sprinkle with remaining 1/2 cup cheese.
