Ingredients

  • 1

    boneless chicken breast

  • salt and pepper

  • 1

    tbsp vegetable oil

  • ½

    cup uncooked quinoa

  • 1

    cup water

  • 1

    zucchini

  • 1

    red pepper

  • ½

    onion

  • ½

    head broccoli

  • 1

    large carrot

  • 1

    tbsp soya sauce

  • 1

    tbsp vegetable oil

  • 2

    garlic cloves, minced

Directions

1. Add quinoa and water to a small pot. Bring to a boil. Reduce heat and simmer for 15 minutes. 2. Cut chicken into strips. Season with salt and pepper. Heat 1 tbsp vegetable oil in frying pan and cook chicken over medium-high heat for ~6 minutes until cooked through. 3. Add soya sauce, oil and garlic to chopped vegetables. Mix well. Add to frying pan. Stir-fry until vegetables are tender-crisp, ~5 minutes. 4. Add cooked quinoa to frying pan and mix well. Season with pepper to taste if desired before serving.
