Ingredients

  • Dressing:
  • 1 can black-eyed peas, drained (like Meijer brand)
  • 1 can black beans, drained
  • 1 can corn, drained (or use 2 cups frozen corn kernels, thawed)
  • 1/4 cup chopped cilantro
  • 1/2 red pepper, diced
  • 1 bunch green onions, chopped
  • 2 Tbsp red wine vinegar 1/2 tsp cumin
  • 2 Tbsp lime juice
  • 1/3 cup sugar
  • 1/4 cup olive oil
  • 1 1/2 tsp salt

Preparation

Step 1

Mix beans, veggies and cilantro. In separate bowl, whisk dressing ingredients; toss with veggies. Chill in fridge several hours (preferrably overnight) for flavors to blend.
