Ingredients
- Dressing:
- 1 can black-eyed peas, drained (like Meijer brand)
- 1 can black beans, drained
- 1 can corn, drained (or use 2 cups frozen corn kernels, thawed)
- 1/4 cup chopped cilantro
- 1/2 red pepper, diced
- 1 bunch green onions, chopped
- 2 Tbsp red wine vinegar 1/2 tsp cumin
- 2 Tbsp lime juice
- 1/3 cup sugar
- 1/4 cup olive oil
- 1 1/2 tsp salt
Preparation
Step 1
Mix beans, veggies and cilantro. In separate bowl, whisk dressing ingredients; toss with veggies. Chill in fridge several hours (preferrably overnight) for flavors to blend.
