Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 cup cornmeal
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 eggs
  • 4 egg whites
  • 3 cups buttermilk
  • 1/2 cup unsweetened applesauce
  • 3 tablespoons canola oil
  • 2 tablespoons butter, melted
  • Toppings: butter, maple syrup, confectioners' sugar, fruit, etc

Preparation

Step 1

In large bowl, combine first seven ingredients. In another bowl, whisk the eggs, egg whites, buttermilk, applesauce, oil, and butter; whisk into dry ingredients just until blended.

Bake in preheated waffle iron according to its directions until golden brown. Serve with toppings as desired.
