Zucchini Relish

Ingredients

  • 10 cups coarsley grated zucchini
  • 4 cups onion, grated
  • 4 cups carrots, grated
  • 1/3 cup salt
  • 1 tsp tumeric
  • 1/2 tsp pepper
  • 1 tsp celery seed
  • 2 1/2 cups vinegar
  • 4 1/2 cups sugar (can use Splenda for half of this)

Preparation

Step 1

Put zucchini, onion and carrots in large bowl. Cover with water and 1/3 cup salt. Cover and put in fridge overnight. Drain and rinse. Put in large pot with all the seasonings. Boil for 20-30 minutes. Place in sterilized jars and can in water bath for 10 minutes.

Makes 4 half pints and 2 cups.
