Zucchini Bread

Ingredients

  • 3 cups unbleached flour, sifted
  • 1 tsp each salt and baking soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 2 eggs
  • 2 cups sugar
  • 2 cups zucchini, grated
  • 2/3 cup oil
  • 1/2 cup egg substitute
  • 2 tsp vanilla
  • 20 oz can pineapple, drained
  • 1 cup nuts

Preparation

Step 1

Sift dry ingredients in a large bowl. Set aside. Beat eggs on Medium speed. Add rest of wet ingredients and mix til well blended. Add to dry ingredients. Do not over mix. Fold in pineapple and nuts. Spray 2 loaf pans. Pour in batter. Bake at 325 for 45-55 minutes.
