Ingredients
- 1 cup each unbleached flour and whole wheat pastry flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tsp cinnamon
- 2 eggs
- 5 TB butter
- 1/4 cup buttermilk
- 1 tsp lemon juice
- 5 large, ripe bananas
- 1/2 cup sugar
- 1/4 tsp salt
- 1 cup nuts
Preparation
Step 1
Preheat oven to 350.
Sift flours, baking powder, baking soda and cinnamon. Set aside. Combine eggs, butter, buttermilk, juice, bananas, sugar and salt. Mix well. Slowly add dry ingredients. Fold in nuts. Pour into greased and floured loaf pan or 4 mini loaf pans. Bake large loaf for 1 hour 15 minutes or smaller pans for 45 minutes.
