Shepherds Pie

Traditional UK recipe. Shepherds = lamb, Cottage = beef. Feel free to use either.

Ingredients
- 1 lb ground lamb or beef
- 2 Oxo cubes or equivalent bouillon powder
- 1 small onion, chopped
- 1 16 oz can diced tomatoes
- 1 12 oz bag frozen peas & carrots
- Salt
- Pepper
- 3 cups mashed potatoes made with plenty of butter and a little milk
Preparation
Step 1
Cook ground meat until cooked thoroughly. Add bouillon cubes or powder and stir. Add chopped onion and simmer 10-15 minutes. Add tomatoes, salt & pepper; stir to mix. Add peas & carrots and simmer 10-15 minutes.
Pour mixture into 9 X 13 pan. Top evenly with mashed potatoes. Make lines on top with fork. Sprinkle with Parmesan cheese if desired.
Cook at 400 degrees until golden brown, about 20-30 minutes.
