Ingredients

  • 1 large yellow onion
  • 1 jalapeño, seeded and chopped
  • 2 carrots, chopped
  • 6 ribs of celery, chopped
  • 1 rotisserie chicken, shredded
  • 1 14oz can diced tomatoes
  • 4 cans chicken broth
  • 4 tablespoons butter
  • 4 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 3 teaspoons hot pepper sauce
  • 1/2 cup flour
  • 1/2 canola oil
  • 8 corn tortillas, cut into strips
  • Shredded cheddar cheese, diced avocado and sour cream for garnish.

Step 1

1. Heat butter in a large pot and sauté onion, jalapeño, garlic, carrots and celery for 5 minutes.
2. Add chicken, cumin, chili powder, salt, hot pepper sauce and flour and mix.
3. Add tomatoes and chicken broth and simmer for 1 hour.
4. Meanwhile, heat skillet with canola oil and fry corn tortillas until crisp.
5. Serve soup with tortilla strips, sour cream and avocados. Top with cheese.
