Twice Baked Yams with Crisp Pecan Topping

Ingredients

  • 4 Garnet Yams
  • 1 Tbsp. Grated Ginger
  • 2 Tbsp. brown sugar
  • 1/4 tsp. pepper
  • 1/2 tsp. salt
  • 1/4 cup quick-cook oats
  • 1/4 cup cold butter cut into 1/4" pieces
  • 1/4 cup chopped pecans

Preparation

Step 1

Cut ends off yams. Slice through middle (in half), creating 8 "towers". Place cut-side up on buttered baking sheet. Season with Salt. Bake 30 minutes at 375 degrees.

Mix remaining ingredients, leaving butter in chunks. Remove yams from oven. Break up insides without harming skin. Add topping. Bake 20 minutes until crisp. Refrigerate leftovers.
