Ingredients
- 1 c. uncooked long grain white rice
- 1 clove garlic, peeled
- 1 Tb. oil
- 1 1/4 lb. peeled shrimp
- 1 egg, beaten
- 1 bay leaf
- 1 1/2 c. water
- 1/2 tsp. soy sauce
- 1/2 onion, chopped
- 2 green onions, chopped
- salt, pepper, curry powder to taste
Preparation
Step 1
Cook rice to pkg. directions; set aside. Saute garlic clove in hot oil in skillet for 3 minutes or until blackened; discard garlic clove. Stir in rice. Cook for 5 minutes or until slightly golden. Boil shrimp in large saucepan for 5 minutes or until pink; drain. Fry egg in small skillet. Add egg, shrimp, bay leaf and wate to rice. Simmer until liquid evaporates. Stir in soy, onion, green onions, salt, pepper and cury powder. Simmer for 5-10 minutes to blend flavors, stirring occasionally. Remove bay leaf before serving.
