Chicken Tikka Masala

Ingredients

  • Marinade:
  • 1 1/2 lbs boneless skinless chicken breasts
  • 1 cup yogurt
  • 2 Tablespoons lemon juice
  • 2 teaspoons ground cumin
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cayenne pepper
  • 2 teaspoons freshly ground black pepper
  • 1 tablespoon minced fresh ginger
  • 2 teaspoon salt

  • Sauce:
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, finely chopped
  • 2 teaspoons ground coriander
  • 1 teaspoons ground cumin
  • 1 teaspoons paprika
  • 1 teaspoon garam masala
  • 1 teaspoon salt, or to taste
  • 1 (8 ounce) can tomato sauce
  • 1 cup heavy cream
  • 1/4 cup chopped fresh cilantro

Preparation

Step 1

While soaking the bamboo skewers in water, make the marinade by mixing all the ingredients in a mixing bowl.

Cut chicken up into 1-inch cubes. Thread chicken onto skewers, and marinate (in the refrigerator) for two hours.

For the sauce, melt butter on medium heat. Add garlic & jalapeno; cook 1 minute.

Stir in coriander, cumin, paprika, garam masala & salt. Stir in tomato sauce. Simmer 15 minutes.

Stir in cream; simmer to thicken- about 5 minutes.

Grill or broil chicken, turning occasionally, to cook through- about 8 minutes. Remove chicken from skewers; add to sauce. Simmer 5 minutes.

Garnish with cilantro Serve with basmati rice, naan or pita bread.
