Zucchini Bread

Ingredients

  • 2 cups grated zucchini with peel
  • 3 eggs
  • 1 cup oil
  • 2 cups white sugar
  • 2 tsp vanilla
  • 3 cups flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/4 tsp baking powder
  • 1/4 tsp nutmeg
  • 3 tsp cinnamon
  • 1 cup chopped walnuts
  • OPTION: can substitute for the oil 1 cup applesauce
  • OR
  • 1/2 cup oil and 1/2 cup applesauce for the 1 cup of oil

Preparation

Step 1

Beat eggs until foamy. Add oil, sugar, and vanilla and mix lightly.

Add grated zucchini.

In a separate bowl mix flour, dry ingredients and nuts.

Add dry ingredients to the liquid mix and stir thoroughly.

Pour into two well greased loaf pans.

Bake at 325° for 60 minutes or until golden brown and toothpick inserted into center of loaf comes out clean.

Remove loaf pans from oven and place on wire racks for 5 minutes. Then remove breads from pans and cool completely on wire racks.
