Lemon-Coconut Fancy Cake

Ingredients

  • 2 package 3 1/4 size leamon pudding
  • 1 cup sugar
  • 1 enevople unflavored gellton
  • 4 egg yolks
  • 1 can flake coconut
  • 1/4 cup lemon juice
  • 2 tablespoons grated peel
  • 1 ( 10 ') bakingangle food cake
  • 1 cup Heavy ceam beaten stuff
  • Decoration
  • 1/2 cup heavy cream
  • 1/2 cup flaked coconut
  • 1 lemon thinly sliced

Preparation

Step 1

1. combine pudding mix sugar and gelatin; Mix well. Stir in egg yolks & 4 cups water mix well
2. Cook, over heat until comes to boil. Remove from heat. Stir in lemon juice & pell.
3.Set pan in large bowl of ice -cool 15 minutes stirring several times
4. Mean while using knife with server edge-cut cake in into 1/2' cubes. Lightly butter 10' tub pan
5. When filling is completley cool but nut set-fold in 1 cup cream whipped and 1 can coconut until mixed.
6. Add cake cubes, mix lightly until well combined.
7. Turn into pan smooth will spatula Refrie. covered severa hours or overnight until set.y unmoled run sharp knife around sdge invert into serving plate. Shake gently or place hot damp cloth over bottom of pan. Decorate with cream and coconut.
