Ingredients
- Peanut Flour, Oat Flour, or Protein Powder Version:
- 1/2 Small banana, mashed well with fork 1
- 1 Egg white
- 2 tbs Peanut flour, oat flour, or protein powder
- 1/2 tsp Baking powder
- Pinch Salt
- Pinch Cinnamon
- 1-3 pkts Stevia (or 1/2 tsp baking stevia, or 1/2-1 tsp sweetener of choice)
- Coconut Flour Version:
- 1/2 Small banana, mashed well with fork 1
- 1 Egg white
- 1 tbs Coconut flour
- 1/2 tsp Baking powder
- Pinch Salt
- Pinch Cinnamon
- 1-3 pkts Stevia (or 1/2 tsp baking stevia, or 1/2-1 tsp sweetener of choice)
- Optional:
- 1 tbs chopped walnuts
- If you are weighing the mashed banana, it comes out to be about 50 grams.

Microwave: Spray a microwave safe mug or small bowl with cooking spray. Place all of the ingredients in a small mixing bowl and stir until well combined. Pour batter into the prepared mug or bowl. Place mug/bowl in the microwave and microwave for 1 minute 30 seconds- 2 minutes, (depending on microwave), or until bread is set! Turn mug/bowl upside down to release. Enjoy!

Oven: Spray an oven safe individual baking dish or ramekin with cooking spray. Place all of the ingredients in a small mixing bowl and stir until well combined. Pour batter into the prepared baking dish. Place baking dish in the oven and bake for 20-25 minutes, or until bread is set! When cool, remove from baking dish and enjoy!
