Sole with Creamy Champagne Sauce

Ingredients

  • Sole
  • olive oil/butter
  • shallot
  • champagne
  • fish sauce
  • lite cream (or FF milk, cornstarch slurry)
  • S&P
  • brown rice, butter
  • parsley
  • julienned carrots
  • sauteed mushrooms
  • scallions
  • lemon wedges, for garnish

Preparation

Step 1

Sear fish; remove. Make sauce; add fish to simmer. Cook rice; toss with butter and parsley. Top with fish, sauce and veggies.
